Temperature Range: 68F to 90F (20C-32C)
Volume Produced: 6.5 US gallons (25L)
Alcohol Tolerance: 20% - equivalent to 17.6lb (8kg) sugar in 5.5 US gallons (21L) water
Instructions to make 6.5 US gallons (25L) of 14% alcohol in 48 hours or 20% alcohol in 5 days:
Pour 5.5 US gallons (21L) of 104F (40C) water into your fermenter. Add 13.2lb (6kg) (for 14% in 48 hours) or 17.6lb (8kg) (for 20% in 5 days) of sugar and mix well until completely dissolved. Then add 1 sachet of Alcotec 48 and stir for one minute. Leave to ferment in 68-90F (20-32C). Notice that fermentation times above may vary a little depending on your ambient air temperature. Do not use an airlock.
Note: You may have to adapt the instruction in some countries to comform with the law.
Notes on Stacking: This yeast is suitable for stacking (fermenting larger volumes) by using 1 package per 6.6 gallons (25L). It is suggested that a maximum of 13.5lb to 15.5lb (6kg to 7kg) of sugar per 6.6 gallons (25L) is used and to not exceed a volume of 26.4 gallons (100L). Larger batches may result in a higher residual sugar and lower attenuation.
Special Note: This type of yeast is also known as ‘Distiller’s Yeast’ because of its ability to rapidly create a high alcohol content. This yeast is not being sold with the intention to distill alcohol as this may be an illegal practice in your area. The Alcotec 48-Hour yeast can be used in natural fermentations without the purpose of further distillation. An activated carbon filter is recommended after fermentation to enhance the smoothness of the flavor.
