WLP820 yeast produces a very malty, bock like style. It does not finish as dry as WLP830. This yeast is much slower in the first generation than WLP830, so we encourage a larger starter to be used the first generation or schedule a longer lagering time.

White Labs' Oktoberfest/Marzen is a great strain for making your fest beers come out sweet and malty! It is less attenuative than other German lager strains, leading to a more residually sweet beer that comes off as malty and rich. As such, it is the perfect strain for making those malty Oktoberfest beers, Marzens, Vienna Lagers, Munich Helles, Bocks and Doppelbocks, Munich Lagers, and other European dark lagers where a sweet finish are desired. This yeast has been known to take longer to start and finish, especially in the first generation. A larger starter and more time to finish out are recommended when using it. However, brewers are pleased with the results of this yeast on these sweet styles, reporting that they make fest beers that are excellent, being full-flavored and malty.
